So what is the difference between between ascorbic acid, sodium citrate, and sodium benzoate?

  1. Ascorbic Acid is vitamin C

    Sodium Citrate is a salt found in citric acid

    Sodium Benzoate is a salt found in benzoic acid

    Aside from being composed of different types of acid, The two sodiums are just a salt extract from their acid base.  

    There solubility in water also varies.   Sodium Benzoate does not disolve well in water whereas the other two do.


  2. Ascorbic acid is derived naturally, but the last 2 must by synthesized.
