Flight attendant like he said is the only one i can think of.  Snakes on a plane is a movie about the flight attendant and cabin crew.  Flightplan is a newer one.  Executive Decision is an old one, one of my favorite plane subject movies.

There was a show called Flight Attendant school on the Travel Channel, but thats the only documentary I can think of. Maybe you could give a bit more detail.

Almost every movie that involves an airplane has F/As in it but the movie really doesnt focus on their job. Theres a movie called View From the Top that came out in 2003 that is about an F/A that stars Gweonth Paltrow.
