What to add to a Chicken Salad?

I'm making dinner for my parents tonight, and since my Dad is trying to lose weight I want it to be healthy. So I came up with a grilled chicken salad. So far I have the chicken breast which I will grill, not fry. I have the lettuce and I also have some parmesan cheese which I can put on top. Anybody else have any ideas that would go good with that? Either as a side or actually on the salad itself? Thanks a bunch in advance!

  1. Grilled Chicken Salad

    INGREDIENTS

    2 (6 ounce) skinless, boneless chicken breast halves

    3 cups torn mixed salad greens

    1 small tomato, chopped

    1/4 cup dried cranberries

    1/4 cup shredded reduced-fat Cheddar cheese

    1/4 cup sliced ripe olives

    2 green onions, chopped

    2 tablespoons chopped walnuts

    1/4 cup fat-free Italian salad dressing

    DIRECTIONS

    Grill chicken, covered, over medium heat for 8-10 minutes on each side or until no longer pink. Divide salad greens between two serving plates; top with tomato, cranberries, cheese, olives, onions and walnuts. Slice chicken; arrange over salads. Serve with Italian dressing.

    Nutritional Analysis: 1 serving equals 383 calories, 14 g fat (4 g saturated fat), 105 mg cholesterol, 776 mg sodium, 24 g carbohydrate, 5 g fiber, 42 g protein. Diabetic Exchanges: 5 very lean meat, 1-1/2 starch, 1-1/2 fat, 1 vegetable.


  2. There are many things you can still add.  Shredded carrots, cucumber, raisins,dried cranberries, a hard boiled egg, baby spinach is always good as it provides more nutrition that regular iceberg lettuce,green pepper, tomatoes. It just depends on what everyone likes.

  4. WIKI WIKI CHICKEN SALAD

    2 c. cubed, cooked chicken

    1 c. pineapple chunks

    1 c. seedless grapes, halved

    1/2 c. slivered almonds, toasted

    mayonnaise (use Light), salt & pepper

    Combine chicken & fruit;  add just enough mayo to lightly moisten.  Salt & pepper to taste.  Toss lightly and serve on lettuce leaves;  garnish with orange slices

    Grilled chicken is also wonderful on top of a Caesar Salad

  5. I would add some toasted almonds or some mandarin oranges! Yum!
