Our school assigns each person to bring snacks once during the school year. We have about 50 people in our school. I want to bring something good and different (everyone always brings the same stuff...veggies and dip, cookies, chips, etc.). At the same time...I don't want to break the bank...any suggestions for some good appetizers/snacks that can mostly be made the night before (no oven at the school...just a microwave and fridge)?

  1. Roll-Ups ... Get the largest flour tortillas you can find.  Spread them with a thin layer of cream cheese (add some seasoning or herbs, if you want); a very thin layer of ham and cheese, and roll them up tightly.  Wrap in foil or saran wrap and refrigerate at least an hour.  Slice into 1" pieces and put on a platter.

I used to bring snacks to a Duplicate Bridge Club too; and would bring tomato or cucumber sandwiches (VERY cheap).  I'd do them the night before, and put in a big tupperware/rubbermaid container, with saran all around inside; and a piece of foil with a wrung-out wet paper towel on top of that, then the top of the container.  Get a big, CHEAP loaf of white bread and cut off the crusts.  I usually did 4 or 6 slices at a time.  Spread a very thin layer of mayonnaise (I've even used hummus) and thinly sliced tomatoes, or peeled cucumbers;  maybe sprinkle a few herbs and a little salt & pepper.  Put another slice (also with mayo) on top, and cut each sandwich into 3 pieces.

Fruit with Dip (Orange pre-stirred yogurt with a little Triple Sec mixed in - or marshmellow fluff with canned pumpkin & cinnamon, )

  2. Pizza. What kid doesn't like pizza. Make or buy a big one, cut into smaller pieces, reheat in the microwave. You'll be the hit of the third grade. And you kid will hear, "Your Mom's so cool."

  3. caramel covered apples

meatballs or lil weenies in a crock pot- mix one jar chili sauce and one can jellied cranberry sauce, add frozen meatballs and 1 pkg lil weenies

tortilla roll ups- softened cream cheese, can diced black olives, can diced green chillies, pkg fiesta ranch dip mix- spread onto tortillas roll up and chill before slicing- serve with store bought salsa to dip in

fruit tray with dip- mix cool whip and strawberry yogurt

    deviled eggs

nacho dip- mix can of chili, jar of salsa, and velveeta cheese in crock pot serve with tortilla chips

cucumber sandwiches- small coctail rye bread topped with pkg cream cheese, pkg Italian salad dressing mix, spread onto bread and top with a slice of cucumber and a dash of dill weed on top of each

  4. You can bring a bowl of mixed fruit and make some dip for it. I make a fruit dip out of a jar of marshmallow fluff and a stick of cream cheese. It is so sweet and yummy! It goes with all types of fruit.

  5. Make cookies yummy : )

  6. well bring brownies or granola bars or portable yogurt.
