Question:

What to bring to a cookout on the lake this saturday?

I am going to the lake saturday morning and spending the day. Since I will be leaving early in the morning I don't know what to bring (food) for a cookout that evening. There will already be hot dogs, hamburgers, green beans and baked beans and I don't know what else. The picnic area does have a small grill to make the meat on and warm the beans. I'm just wondering what to bring that can be reheated that evening. Would it be good to make baked potatoes before I leave and just keep them in foil until they can be reheated on the grill that evening? Or would they still be good?? If anyone has any other suggestions for something warm or cold to bring, I would appreciate them =)

  1. Baked potato salad. it is easy and so good. i leave the skins on the potatoes and use sour cream instead of mayo, and bacon bits, soft not hard. or real bacon if you have the time. green onion all of them not the very ends of course. and shredded Cheddar cheese. it is so good i took it to a church b.b.q once and now i have to bring it every time we have a pot luck or b.b.q. you will never go back to the old potato salad. make it just like a loaded baked potato.


  2. A fruit salad.

    A pasta salad.  Stay away from anything with mayo.  That will go bad in a hurry and you don't want to be the one that makes everyone sick!  lol

    A pie.

  3. A fruit or veggie tray

    Snacks (Chex Mix, pretzels, chips and salsa/dip, pita bread/chips and hummus, etc.)

    Desserts (brownies or cookies)

    Potato or pasta salad that doesn't have mayonnaise in it (if it's got an oil/vinegar dressing, it can sit out longer)

    Cole slaw

  5. This is my favorite dish for a pot-luck, because it can be served hot, cold or room temp:

    ARTICHOKE RICE SALAD

    1 pkg. chicken flavored rice mix (like Rice-a-Roni)

    2 green onions, thinly sliced

    1/2 green pepper, chopped

    8 pimento-stuffed olives, thinly sliced

    1 6-oz. jars marinated artichoke hearts, cut up

    1/4 tsp. curry powder

    1/3 c. mayonnaise

    Make rice per package instructions.  Mix everything else into the hot rice, and blend thoroughly.  Serve hot, cold or room temp

    You could also bring a bean salad, since it doesn't really need to be kept refrigerated (just don't leave out in the sun all day).  Combine drained cans of green, wax, kidney and garbanzo beans, with some sliced onions, and a good balsamic vignarette dressing ......

  6. Cookout Fried Potatoes

    sliced potatoes, enough for 4 people

    1 large onion, sliced

    6 slices of bacon

    salt and pepper, to taste

    Roll out two sheets of aluminum foil large enough to hold a mound of potatoes. Lay 3 slices of bacon long ways on the foil, layer potatoes and onions, then for the last layer lay 3 slices of bacon on top. Salt and pepper each layer as you desire. Roll out two more sheets of foil unless you are using heavy duty foil, and lay over the potatoes and on all four sides roll the foil up tight. You can turn that foil over when you think the one side is done. Lay foil pack on grill or over campfire coals and cook for 20 minutes, turning occasionally. When potatoes are tender unfold foil, scope out onto a serving plate, and serve.

    And I just had to throw this one in because it's so yummy!!!

    Cookout Banana Splits

    6 large bananas, unpeeled, stems removed

    2 cups semisweet chocolate chips

    1 (10.5 ounce) package miniature marshmallows

    Preheat the grill for high heat.

    Spray 4 sheets of aluminum foil, large enough to wrap bananas, with cooking spray.

    Slice the peel of the banana from stem to bottom, while slicing the banana inside lengthwise. The bananas can be cut into slices instead if you like, (while still in the peel) for easier handling later.

    Carefully open the banana just wide enough to place the chocolate chips and marshmallows inside the peel with the banana. Stuff with as much of the chocolate chips and marshmallows as desired.

    Wrap the bananas with the aluminum foil and place on the grill or directly in the coals of a fire. Leave in long enough to melt the chips and the marshmallows, about 5 minutes. Unwrap bananas, open the peels wide, and eat with a spoon.


  7. Do not do baked potatoes (at least not the way you mentioned.)

    When you cook the potato in foil and leave it, you run a risk of botulism.  The warm, moist dark environment is IDEAL.  When oyu cook your baked potatoes in foil, you should remove the foil very soon after they are cooked.

  8. How about snack foods that can easily sit at room temp?  Stuff like Chex Mix, cupcakes or muffins, pecan tassies, brownies, cookies, cheese straws, bread sticks, garlic roasted or sugared roasted nuts or pretzels, homemade soft pretzels... or even a couple of watermelons, iced down in an ice chest for snack or dessert.
