Question:

What to cook for friends?

I am having my Friends(9) over for dinner tomorrow nite. And do not have a clue what to make. Am sick of the 'Taco nite' or Lasagne...

Anyone have any ideas on something easy to tasty to make??

  2. Everyone loves comfort foods.

    Any of the variations on the theme of cottage pie. That is something in a sauce, such as cod/prawns in pasley sauce with a thick layer of mashed potato on top. Baked off in the oven with dabs of butter on top....

  3. Well, if it's easy you're looking for...why not go for fish!

    STARTER:

    Bruschetta - chop up a french stick & toast lightly.

    Make up chopped tomatoes, chopped garlic, basil (& whatever you find tasty) & spread on top & toast for a little longer.

    Dead simple.

    MAIN COURSE:

    Place 10 salmon steaks in a home made foil parcel (basically layout a large sheet of tin foil, put steaks in middle.  You will fold it back on itself and pinch it together.)

    Drizzle lemon, a little olive oil & herbs over the entire.

    Seal up the parcel & place in oven at 180 Degrees for 15/18 mins.

    Boiled new potatoes - serve in a large bowl in centre of table.

    Asparagus or petit pois.

    Hollandaise sauce - M&S do great little pots of this, ready made.

    DESSERT:

    M&S cheesecake!

    Mmmm!  Hope it gives you inspiration anyway!!

Why not make a big pot of chicken curry and serve with rice and nan bread.  Simple.  Have poppadums and various dips to start with and something like ice-cream for dessert.  Cooking for 9 you need to have something easy that isnt going to involve you using every ring on the cooker.  You could make the curry tonight - I wont give you a recipe now as there are so many different ways to make it.  Add veg such as broccolli, peppers, peas mushrooms and carrots to add colour and vitamins.

  6. Why not do them macaroni cheese and chips - if you do I doubt you'll get any complaints or get any left over for tomorrow!

  7. Charcoaled Hamburgers.  Or go buy a sliced smoked brisket (already cooked in the freezer section) and have BBQ Sandwiches with Pot. Salad.

  8. Orange Tarragon Chicken

    Ingredients

    1½ oz butter

    2 tablespoons oil

    2 chicken b*****s cut into strips – also works well with turkey

    1 onion

    6¼ oz unsweetened orange juice

    black pepper

    zest of an orange

    ¼ pint water

    1 chicken stock cube

    4 sprigs fresh tarragon or 1 tablespoon dried tarragon

    Method

    Melt butter and oil in a pan. Brown chicken strips. Drain, remove

    from pan and put in the bottom of a 2pt casserole dish dish.

    Chop onion put in the pan and cook in the remains of the butter

    and oil for 2 - 3 minutes.

    Stir in orange juice, zest, water, stock cube, tarragon and fresh black

    pepper.

    Bring to boil and then add to chicken.

    Cover and cook in moderate oven for 1-1¼ hours

    To Thicken Sauce

    1 tbl. plain flour

    ½ oz sunflower margarine.

    Combine together in a small bowl

    When casserole come out of the oven (very hot) drop little walnut

    size pieces into the sauce and quickly stir in.

    Cool slightly, stir in a couple of tablespoons of double cream, and decorate with fresh

    tarragon or parsley.

    Serve immediately

    this is cool you can double everything so youll have enough for every1 this is very tasty^^

  10. How about a bit of Spanish influence for a change and cooking a big Paella - its simple, tasty and very impressive (particularly for cooking for crowds)

    Serve some Sangria, again easy to make, and you'll have a right old party.

    As for dessert... keep is simple... ICE CREAM! put out a few tubs of different flavours and bowls of different toppings and sauces and let everyone make their own icecream sundae.

  11. You could try a spanish omelet.  I made 2 and that went around about 9 people - with a salad.

    What I do is to peel and dice into small cubes, some potatoes, then parboil them so that they are just right ie not too mushy.

    Whilst they are busy cooking, I cut up some bacon and fry them in their own juices, then once they are crispy, put them aside until later.

    Together with the potatoes and chopped onions, I fry both until browned, then add the bacon; scattered evenly over the dish.

    Break 6 eggs into a container; add salt and pepper, then pour over the mixture in your frying pan.  Allow the eggs to settle then put the whole pan under the grill to brown the top.

    For the salad: Roughly chop the lettuce, preferably a coloured one!  Chop some shallots up and mushrooms, then add olive oil, basaltic vinegar, herbs and mix all together.  Then if you can get a french stick or 2, you will have a nice, simple, pretty and filling dish.

    Honestly, it is simple to make and will go down a treat - unless there are allergies against eggs, etc.


  12. Make a giant pie - chicken pie is good!  with lots of vegetables and maybe a salad to go with it.  Although it will have to be a really big pie (or two nromal pies) to feed 9 people.

    I recently fed 9 people with a big pot of vegetable soup, 3 racks of lamb, a chicken and potato pie, and various different salads....its good to have variety just in case someone is fussy!

    Or you could do a big pot of chilli con carne, and serve it with either rice, or baked potatoes.

  13. Roast a turkey. Most people only have it for Thanksgiving. Such a waste of such a wonderful meat.

  14. Start with a light soup

    Leek and potato

    thinly slice leeks(white part only)

    9 med Potatoes peeled and cubed

    9 leeks rinsed and sliced( white part only)

    Water

    place potatoes and leek in pan and add enough water to cover.high heat to boil...turn down heat and let simmer 20 mins.

    run though ricer or food processor until smooth add 4 T butter and milk to thin,,,,season to taste

    follow with a salad

    Cucumber and Tomato salad.

    6 cucumbers

    6 vine ripe tomatoes

    1/4 cup salt

    Peel cucumbers and cut length wise.Remove seeds with small spoon.slice and place in colander add salt and toss.place colander over large bowl and let "Sweat" for 2 hours.

    Dressing

    1/4 cup vinegar

    salt and pepper to taste

    3/4 cups oil

    1 glove garlic minced

    1 half small onion minced

    1 tsp parsley

    put vinegar in large bowl add salt and pepper.whisk until salt is dissolved add remaining ingredients and blend well.add cucumbers and sliced tomatoes toss well.refrigerate for at least 2 hours before serving.

    Then your main dish

    Cornish hens

    place hens(9) in large baking pan...brush with butter season with rosemary ,salt and pepper.place in 450 oven for 5 mins...reduce heat to 350 and cook 1 hour or until juice runs clear.


  15. I was going to suggest spaghetti bolanaise but too similar to lasagna .

    So how about something simple like Mac cheese and spicey potatoe wedges with a side salad  and home made garlic bread. All made from scratch .

    Simple and tasty no.

    And for a starter you can do a simple veg plate with dip.

    And a wholesome apple crumple or bread and butter pudding for desert . all home made and easy to perpare in advance so you too can sit and enjoy with your friends instead of being in the kitchen all night no.

  16. what about a cold pasta salad-shells and either smoked salmon or chunks salmon you grill and wait to be cold or crab meat.add peas and chives.serve with a creamy sour cream dill sauce.

    serve with a baby spinach salad,sliced avocado-slice till u ready to serve and mushrooms,add pieces of crispy bacon,just olive oil,lime juice salt and pepper

    appetizers mozzarella cheese, cherry tomatoes,drizzled with olive oil ,chopped basil.serve with toothpicks-you can add olives and some anchovies.

    dessert ice cream and cookies.
