Question:

What to cook my vegetarian boyfriend?

I've agreed to cook my boyfriend dinner and don't know what to cook, he's a vegetarian. If anyone could suggest any nice, cheap recipes that would be great thanks. Preferably if they didn't include cheese.

I'd suggest  the following:Stir fried veg's with ribbon pasta.Mushroom sauce on the side,with coleslaw salad with raisings on the side.Mashed butternut on the side also with the vegetarian russians/vienass/burgers!Not forgeting malva pudding for the dessert!Try it out gal and make a candle light dinner for two!!!!!!

  6. you could try some kind of spaghetti with marinera, or something with fake meat if he likes that kind of thing. if he does then it might impress him that you went through that much trouble

  7. I live in Greece and lots of the mediterrannean diet is meat-free. My favourite is Yemista (stuffed tomatoes). Other good ones are Fasolada (bean soup) and Revithosoupa (chick pea soup).

    Just google the names for the recipes.

  10. Creole Stuffed Peppers(Veganomicon)

    Time: 55 minutes

    4 large bell peppers

    2 tbsp. olive oil

    1 medium size yellow onion

    2 jalapenos(cut in half/seeded)

    1 cup of finely chopped carrots

    4 cloves of garlic

    2 dried bay leaves

    1 tsp dried oregano

    1tsp dried basil

    2tsp paprika

    3sprigs of fresh thyme

    1 tsp. salt

    1 can(15oz)can diced tomatoes

    2(15oz) cans black eyes peas, drained and rinsed

    1/4c chopped fresh parsley

    Preheat oven to 350F amd grease 9/13 inch casserole dish. Bring large pot of water to a boil.

        Cut the peppers in half, lengthwise through the stem end. Remove the seeds and membranes. Submerge peppers into the boiling water and cover. Let them boil for 5 minutes, then drain them immediately and rinse with cold water to cool them down a bit.

       Meanwhile, heat the oil in a large skillet over medium-high heat. Saute the onions, jalapenos, and carrots for about 10 minutes.You want the veggies to be brown(especially the carrots). Add the garlic about 5 minutes into the sauteeing process. Add the bay leaves, other herbs and spices and salt, and saute for one more minute. Add the tomatoes and peas, stir and cover and cook for 10min. If it looks too liquidy remove the coverand cook long enough to reduce some of the liquid. Mix in the parsley. Remove the bay leaves and thyme sprigs.

      Spoon a little less then 1/2 C of veggie mixture into each pepper half. Place the stuffed pepper halves in the casserole dish and bake for about 25 minutes.

    Can be serves with rice, potatoes, whatever suits you.

  13. i was going to suggest eggplant parmigiana?? but no cheese??  well how about just the breaded eggplant and spaghetti with mushroom / tomato sauce?? plus a  salad of course!!

  14. How about a tart? So easy to cheat at, buy puff pasty, roll out to the size of the tray youre going to use, brush the tray lightly with oil, place pastry on tray. Spread a light coating of pesto or chutney or tomato sauce/paste on the pastry, leaving a 2cm border(for the tart crust) Cut up courgette, mushrooms, red onion, pepper, olives, squash, garlic (any veg you want really). Scatter this over the pastry (not the border though). Drizzle lightly with olive oil (some cheese on top such as feta/grated cheddar goes really nicely too), then bake on a medium heat (180ish), its ready when the pastry is puffed and golden brown. Serve with a salad and houmous. It is very tasty.

    Oh! Just thought of more! How about stuffed peppers?? Cut  pepper length ways and deseed. In a bowl place about a cup full of couscous(you could use rice or something instead if you like), add some vegetable stock cube and boiled water and cover until cooked (no time at all). Chopped up finely, a mushroom, a few olives, some onion, some courgette then stir this into the cooked couscous, add a little olive oil or melted butter to this. Season then stuff the pepper halves with this mixture, I also add diced feta, but obviously leave it out if you want to. Bake for aprox 35 mins. I serve mine with roasted new potatoes and steamed green bean, tasty!

    Buy some "beanfeast" spag bol (follow instructions on the pack)  - then add some quorn mince (fried) peppers, onions, mushrooms,tinned tomatoes, garlic, tomato puree and anything else you fancy - DO NOT add Worcester sauce as that is not suitable for veggies

    EDIT : Forgot to say buy some spag bol sauce (suitable for veggies) and add to all the above - serve as normal with spagetti, garlic bread and vegetarian cheese - oh and make sure the wine is suitable for vegetarians aswell x

      Loaf [Reset] Keys : Main Dish Vegetarian  

    Ingredients :

    2 cup Raw cashew nuts

    1 box AM Quick Brown Rice (Vegetable & Herb), cooked

    1 cup Cooked AM 7 Grain Cereal

    2 cup Soy milk

    1 lrg Onion, chopped

    3/4 cup AM Wheatgerm

    4 tbl AM Canola Oil

    2 tbl Soy sauce

    1 tsp Sea salt (optional)

    4 tbl Minced parsley

    1/2 tsp Thyme

    1/2 tsp Ground celery seed

    1/2 tsp Ground sage

    1 tsp Onion powder

    1 tsp Garlic powder

    Method :

    Chop the nuts fine, or run through a food grinder. Add the remaining ingredients and mix well. Place in a baking dish and bake at 350 F. uncovered for 1 hour or until done. Serve with favorite gravy.

  19. Go to a Super Market or something, go to the frozen food isle, and look for Morning Star Products, it's vegetarian meat, all made from soy, they ushally have recipes on the back of some of the boxes, however, the products are not vegan.

  21. I reckon Thai food. I'm a vegetarian too and I love it cos it has loads of flavour and is also pretty healthy.

    I'm not too sure about quantities but here are the ingredients:

    - Quorn chicken style pieces

    - Vermicelli (rice noodles)

    - Coconut milk or cream

    - Chili

    - Coriander

    - Garlic (crushed)

    - Limes (for juice)

    Just stick the Quorn pieces in the microwave to defrost, then fry them in some oil. Add in the garlic and chili and fry off. Put in some boiling water, some of your coconut milk/cream and your cooked noodles. Let that simmer away for a while and season. Add in your coriander. Then just before you take it off the heat pour in the lime juice (otherwise it can cook too much and the taste will be affected).

    I didn't get this recipe from anywhere in particular, just kinda experimented by putting a few generic Thai ingredients together, which is why I can't really say quantities. Also some people prefer it with more liquid so it's more like a soup and others prefer less so ;) It's just guess work to suit your tastes and mood really!

    Btw, I realise my recipe wasn't nearly as detailed as other people's but I promise you it's really easy and you can use as much or as little of the ingredients as you want :) Also it's pretty quick to make but can be an impressive dish!

  24. if he likes the TASTE of mean just not the idea... try something like lasagne (altho i guess thats cheese) or chicken korma, except not chicken, put in quorn...its just as nice and if he's not always been veggie he might miss meat sometimes.

    otherwise, pasta with lots of chopped up vegetables homemade is really nice

If you guys like Italian food, I'd reccommend Gnocchi, which are almost like a pasta, but made with potatoes.  A basic Gnocchi recipie can have just about any sauce or topping you want, or you can add things into the Gnocchi- like Spinach.  To make Gnocchi: Boil potatoes, peal and mash them with 2 egg yolks.  Add flour until it forms a semi-sticky dough, then shape into little balls.  Put them into boiling water.  After they start to float cook them for another 1 or 2 minutes.  Then top them however.  They are very filling, so you don't need to plan much else to go with them.

  26. Veggie Chili is a great meal and inexpensive- I serve with cheese quesadillas, but you could just do tortillas and butter if you don't want the cheese:

    Ingredients

    • 3 Tablespoons olive oil

    • 1 1/2 cups chopped onion

    • 8 large garlic cloves, chopped

    • 2 19 oz. cans red kidney beans

    • 2 19 oz. cans dark red kidney beans

    • 1 envelope taco seasoning or 1/4 cup taco seasoning

    • 1 teaspoon dried basil

    • 1/2 teaspoon dried oregano

    • 1/2 teaspoon dried thyme

    • 1 15oz can tomato sauce

    • 3 cups chicken broth or vegetable broth

    • 1 6oz can tomato paste

    Directions

    Heat oil in heavy saucepan over medium-high heat. Add onions and garlic.  Saute about 8 minutes or until onions are translucent.  Add beans, taco seasoning, basil, oregano, and thyme.  Stir 2 minutes.  Mix in tomato sauce, chicken broth and tomato paste.  Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 and a half hours.  Season to taste with salt and pepper.  Refrigerate until cold then reheat over low when ready to serve.
