  1. You can always bottle them so that you can use them later in the year.  Its really easy.  


  2. half or quarter and put in a single layer in a baking tin

    then put in a very hot oven with a little olive oil and leave for 15 mins

    then turn off oven and leave for hours , - overnight preferably

    can be stored in sterilised jars covered in oil and herbs

    voila - home made 'sundried' tomatoes for using in pastas,  sauces, chillies etc

  3. just put them all in a pan with a bit of water, s&p, simmer till they are soft then drain through a seive using a spoon to push most of the bits through into a bowl for tasty tomato soup

  4. Make ratatouille and pasta sauce. Both easy to make and plenty of recipes online. You can freeze them in individual portions.

  7. Boil them up with some water to make a tomato sauce and then freeze in appropriate quantities.  You will not need to buy Ragu for ages!

  8. Tomato And Avocado Salad

    Late summer is a time when many veg box schemes and home veg growers have a glut of tomatoes. If you’ve got some that are really ripe and full of flavour, then this simple salad is really delicious.  



      

    Ingredients

    Serves 4

    4-6 medium tomatoes

    2 spring onions (optional)

    1 ripe avocado

    200g lettuce leaves (any combination)

    Dressing (optional)

    1 tablespoon white wine vinegar

    Juice of ½ lemon (optional)

    1 tablespoon olive oil

    ½ teaspoon runny honey

    Handful mixed summer herbs, chopped (e.g. parsley & chives)





      

    Method

    Wash the tomatoes and spring onions.

    Chop the tomatoes roughly. Slice the spring onions.

    Peel the avocado and remove the stone.

    Chop the avocado flesh into small chunks.

    Wash the lettuce leaves and dry well.

    Mix all the dressing ingredients together, until well combined (a small s***w-top jar is the easiest way to do this).

    Mix all the salad ingredients together and drizzle the dressing on top. Serve immediately.
