What to do with dried bean curd sticks ?

My sister gave me some dried bean curd sticks, what can I use them in ?

Do they need to soak first ? If so how long ?

how much per person ? (I'm cooking for three)

dried bean curd sticks are usually used in Chinese-style soups and braised meat dishes (slow cooked dishes)...  You can probably use it in stir-fries too.

Just soak until soft and you're ready to cook.

You should soak them in hot water in a pot until they become soft (but not too soft, or they will break apart). I'll say between 5-10 minutes. You should have about 5 per person, so it'll be 15.
