What to do with leftover roast chicken

I made roast chicken for lunch yesterday and only used the breast so i refrigerated the legs and wings hoping to use them up for today's dinner for me and my 2 children.

I have only ever used roast chicken the next day in salads because i don't know if i can re-heat the meat.

Can I re-heat it?

If so,do you have any recipe ideas?

  1. There are several things you can do. You could make a sandwich with some cheese. Or you can get some cheese, chips, and maybe some salsa if you want to go colorful, and you can make nachos. You could take out some lettuce, tomato, cheese, and then make a salad. Lastly you could reheat the meal. The problem is that after you reheat if more then once it will start to go back. IF you really get desperate and have already reheated it once and there seems to be know hope for it feed to a pet or donate it to a shelter around town.  


  2. Yes, you can re-heat it.  :)

    I would pull (shred) it, dump in a saucepan with some BBQ sauce (maybe some honey & spices to taste), and heat through.  Spoon over toasted bread slices or buns.

    Or maybe some chicken fajitas.  Just pull the meat, and stir fry with some veggies.  Spoon into flour tortillas, top with salsa, sour cream...etcetera.

    Or...(hehe, you got me going!)  Pull (or chop) the meat.  Set aside.  Make a white sauce (3 tbsp butter/margarine, 3 tbsp flour, 3 cups milk...double if need be).  Once it has thickened, add chicken, and season to taste.  Serve over your choice of pasta or rice.

    Or...Tex-Mex Chicken Spaghetti.  Take a jar of salsa (heat of your choice), a jar of alfredo sauce, one onion (diced).  Make spaghetti noodles according to package directions.  Meanwhile, saute onions until transluscent.  Add chicken (pulled or chopped) and salsa; bring to a simmer.  Add alfredo sauce.  Drain cooked spaghetti & add to mixture.  Toss until coated.

  3. Of course you can heat it up ! Won't taste as good as it was the day before but its possible to heat it up. You can also grab all the meat, take some mayonaise, and put it on bread to make a roast chicken sandwhich ! I think that's the most easiest thing you can do with left over meat and plus you can put whatever ingredients you want.

  4. Yes you can reheat, but only once.

    I would take the chicken off the bone and either do a stir-fry, use with a jar of cook-in sauce, curry or pasta.  My pasta are really easy.

    Cook your favourite pasta and when cooked drain.

    Chop an onion and gently fry until softened.  Add a tin of chopped tomatoes, some herbs and the chicken.  You can add any veg you like, such as mushrooms, peppers, courgettes, sweetcorn.  Bring to the boil and simmer for a few minutes until warmed through.  Pour over cooked pasta.  

    For a pasta bake put oven on 200c, do as above but when the sauce is warmed through, add the pasta to the pan.  Stir through.  Transfer to an oven proof dish and grate some cheese over the top.  Cook for 20 minutes.

  5. I love the leftovers- cut up some tomatoes and some basil, add cheese- parmesan or mozzarella and add a splash of balsalmic vinegar and olive oil- add the cut up chicken and hot pasta.
