What to do with overripe corn?

I have a garden and our corn took off and we had more than we could pick. Now we have too much and now the corn that is left (which is quite a bit) is overdone. It is way too stachy and terrible. We have several rows and i feel it is too much of a waste to toss them all in the mulch pile.

Is there something I can do? My husband says to boil it, I don;t think that will work. What abour making masa out of it or anything like that. I know we can never get it back to perfect ripeness but anything besides animal feed or mulch?
