Question:

What to make for dinner!?

what should I make for dinner tonight? I'm not in the mood for anything and my boyfriend gave the usual response "i dunno, whatever"

i'm going to run to the market later when I bring him lunch so I don't need to defrost anything, but I don't want to have to buy too much either (low on funds) I have a lot of condiments, some fresh veggies (mushrooms, garlic, onions, green pepper) and I can get a few basic veggies / meats

I was thinking a whole roasted chicken, or pizzas...but I dunno...

give me some tastey ideas!

oh and they have to be dairy free....or at least adjustable to be dairy free (like no mac and cheese, but if something has cheese on it I can just omit it for him) Thanks!!!

(ps we love garlic, red meat, chicken, carrots, spinach, mushrooms, onions.....)

  1. If you love mushrooms, I have a great recipe for marinated grilled mushrooms subs that have spinach. And if you don't want to do vegetarian, you can add some grilled chicken to the sandwich. Check out the link for the recipe.

    Another easy idea is to take whatever veggies you have in the fridge (but I particularly love carrots, onions, potatoes, sweet potatoes and squash). Add some sausage and roast everything in a pan at about 450 degrees for 45 minutes. Happy cooking!


  2. get precooked or raw beef or chicken and do fajitas get tortillas cook up veggies and garlic or put it in a soup or do salmon patties with sauteed veg on side

Take a mixture of vegetables such as potatoes, tomatoes,mushrooms,  peppers, sweet potatoes, onions, carrots and peeled garlic cloves, chop them up into chunks..make the potatoes and carrots the smallest, and place them ll in a roast or casserole dish with a tablespoon of vegetable oil, a good pinch of dried herbs and pepper to taste; cover with a lid or foil and bake for forty minutes then uncover and continue roasting for twenty minutes or until everything is ready..check ten minutes early on each time as it is all going to depend on the size of the pieces. Serve with roast chicken and bread. Butternut squash and courgette go well with this mix too..be experimental with the things you like and when you have it just right try it with fresh roast lamb...costs more but it is amazing.

Get some boneless, skinless chicken b*****s.  Line the bottom of a baking pan with aluminum foil.  Put a little olive oil on the chicken, then season with basil, garlic, onions, and pepper.  Cover with foil, then bake at 350 for about 45 minutes.  Serve with some Stove Top stuffing and spinach or carrots.

    Easy to make, easy to clean up, and the chicken is very moist and juicy.

  6. Pasta is great and you can toss it with anything, dice up any meat and/or veggies and cook in olive oil and fresh garlic and add in your al dente pasta.

    Meatloaf is always so easy and filling and my guys around here love it. Add a baked tater and some steamed broccoli and you're good to go.

  7. Just pick up some sweet italian sausage (inexpensive) and make sausage grinders with the very list of stuff you said you already have. Put cheese on yours if you want.
