  1. Get some small baby red potatoes, you don't have to peel them and you just have to give them a rinse, pop in some cold salted water till their done, drain well and add some butter, YUM.

For a vegetable, there's a bunch of great frozen ones you can purchase also.  If you want a gravy, buy Knorr brown or mushroom.

Another idea is to get some egg noodles and boil these up, take a look on the package, they don't take long at all to cook and add butter when drained, they go well with beef also.

As to how to cook your medallions.  It all depends on the size and how you like them done, medium, well done etc.  But I would get a hot fry pan and sear them for a few minutes on each side then put in the ove for say another 5 minutes at 350 degrees.

    Enjoy.

  2. How about a side salad and some french bread.

Or rice pilaf and steamed vegetables

Broccoli and hollandaise sauce and baked potatos.

  3. Roasted new potatoes, sweet potatoes, onions adn carrots (a medley)

    steamed asparagus or broccoli
