What to make with left over chicken from crockpot?

I have about a 1 pound of left over roasted chicken from my crockpot and don't know what to do with it. Last night I made chicken salad out of it but I still have enough left for one full meal. It's a little too dry to just reheat and eat but I need something quick and easy to make toniight. Any ideas?

  1. I'd do enchiladas or chicken soft tacos.


  2. Chicken and dumplings sound good. I use the recipe from the side of the Bisquick box for the dumplings.

    Take about 4 cans of chicken broth, add chicken, bring that to a boil, add salt pepper and a little poultry seasoning, drop dumplings in, careful not to stir too much or they will dissolve turn your heat to low and cook for about 10-12 minutes, add a can of cream of chicken soup, stir and then serve.

  3. Chicken Spaghetti

    Boil up some spaghetti or other pasta. Melt some a pound of Velveeta and and some Rotel Tomatoes. Chop up the chicken and add to cheese and tomatoes. Mix in with pasta. One of those  things you take to a pot luck dinner.

  4. sandwiches!!! or throw it on a salad!

  6. Shred it and mix with BBQ sauce and serve on buns ... coleslaw and baked beans or potato salad

  7. Chicken enchiladas, chicken tortilla soup, chicken casserole, shredded bbq chicken sandwiches.

  8. Saute a coarsely chopped green pepper with 1/2 of a chopped onion and a few cloves of garlic in some olive oil, add your chicken, and pour in a jar of spaghetti sauce. Serve over pasta for a "quickie" Chicken Cachatore.
