  2. I used to make a beans and rice dish for my daughters with vegetables and chicken, and they loved it.  It was balanced and cheap.

    I would boil up the chicken parts in salt water until it could be shredded from the bone.  The stock was used to make the rice and bean.  A  couple of chicken bullion cubes added flavor and for other vegetables I used chopped carrots, celery, peas, and/or corn.

    Chicken legs and thighs are cheap and tasty.  The beans can be Pinto, Kidney, or what ever you want to prepare.  You can add more water to make a soup or serve it as a gruel and that was my girls' favorite.  Salt and pepper to taste.

  4. This is my number one staple for my kids, and has been since they could chew.

    Milk and Honey Balls (adapted from the recipe found in Super Baby Food by Ruth Yaron)

    1/2 cup peanut butter (can also use sunbutter, soynut butter, almond butter or any nut butter)

    1/2 cup honey

    1 cup dried milk (I use Soy Beverage Powder)

    1 cup ground oats (to grind oats, place 2 cups dry regular oats in a blender, and process on high for 2 minutes or until powdery)  You can also substitute graham cracker crumbs, oat bran hot cereal (dry), wheat germ, ground up crunchy granola bars, ground up Kashi Go Lean Crunch, flax meal (use sparingly especially at first), or any combination of the above to total one cup.

    Mix all ingredients.  Form into balls and serve.  Refrigerate unused portion for up to two weeks.  This is such a versatile recipe; you can make kabobs (string the balls on a skewer alternating with melon balls, or other fruit chunks--cut off sharp end before serving to young children).  You can stick three balls together (using extra peanut butter as the glue) and add raisins for eyes, julienned carrots for legs and antennae to make a caterpillar.  Stack three balls to make a snowman.  Roll out to 1/4 inch thick and cut with cookie cutters.  Slice apples or bananas and use the flattened balls on either side of the apple slices to make fruit sandwiches.  



    Make a large flat circle, place a section of banana on top, then roll the circle around it to make banana enchiladas.

    Shape the dough into various animal shapes (octopus, whale, fish, shark, snake, snail, turtle, etc.)

    Shape the dough into a long skinny cylinder, then shape into letters to spell her name or initials.

    Use dough molds to create other shapes.

    The possibilities are endless, get creative!

    This is a great recipe because of its ease of prep, no cook, versatility, and the best part is that alone it serves as 3 of the 4 main food groups.  When you serve it with fresh fruit or vegetables you cover the entire pyramid.  Did I mention that they taste great, and that even toddlers will eat them?

  5. tie dye PB&J  you use food coloring to give the bread a tie dye look,  a friend i went to elementary with used to have that all the time, it looked so cool!  and you can fill the sandwich with anything, bologna, cheese, turkey is good, and swap out the filling daily.  some carrot sticks with her favorite color for ranch dressing, kids like things they can help out with, experiment by simply changing the look of a usually bland meal.

  6. hmm.. I wouldn't give a three year old anything with food colouring... avoiding E numbers is a good idea.

    What about a pasta with a tomato based sauced with lots of veggies hidden in it?  You can grate carrots, courgette and put it in the sauce.  Maybe some pumpkin mash with a bit of grilled chicken and some green beans.  Best get her eat as many veg as possible.  Have some fruit and yoghurt after.  Better to buy natural yogurt and sweeten with honey.

  7. spaghetti and meatballs: use ground turkey or chicken to make smallish size meatballs, and a mild spag. sauce: you could also use a whole wheat pasta; Add some carrot sticks, maybe cucumbers with ranch dressing....Colorful won't matter to a 3 year old if it tastes good....

    Chicken noodle soup (homemade) Easier than you might think....foodnetwork.com for recipes...I just boil a fryer chicken (3lbs or so) in water to cover; add carrots, celery, parsley during the boiling; Remove chicken and veggies, save the carrots to cut up into the finished soup; Cool chicken and remove from bones into bite size pieces; Add boullion cubes or powder to broth, salt and pepper, a bit of sage; add chicken carrots and then noodles (egg noodle type) Bring to boil, simmer until noodles are tender...serve with a nice biscuit or slice of whole wheat bread and butter.
