What type of crab meat is used in California Rolls?

I know they are some type of ground or shredded crab meat.. but do most restaurants use real or artifical crab meat? :]

  1. If it only says Crabmeat, it is REAL crabmeat, If it says imitation Crab meat, it's probably shark meat. It is the only "fish" approved to be processed as "imitation" of other seafoods, and can be ptocessed to look and taste like the real thing.

  6. Up to you..if you go to a crappy restaurant--- they will give you fake crab (surimi). If you go to a real sushi "bar' where Japanese people eat it serves real crab of various grades.

    There are places , that will serve you fake and Japanese real at the same place....They are usually large popular places  in a "China-Town----(seattle, S.F.,Vancouver,BC.)"with a menu in two languages (tourist & Japanese) and both clientele...You have to be specific then if you want real food.   There is no Calfornia roll on the "Asian menu" so no quality control in a way.

Usully it's surimi, which is the Japanese name for imitation crab meat (the same stuff you see in supermarkets).  Some places will make it with real crab meat, but if they do they'll state the type of crab.  It's actually more moist and flavorful with the surimi.  The delicate flavor of real crab gets overwhelmed with all the other flavors going on.

    It may sound like it's low quality to be using surimi, but it's really not.  It's tasty, traditional (Japanese make various products from fish puree and seasonings)
