  1. Usually jasmine or oolong, depending on the restaurant. Sometimes they have a type of green tea, but again, it depends on the restaurant. By the way, if you like green tea, try the green tea ice cream if it is offered on the menu. It's very refreshing.

  5. Typically in chinese restaurants, it's a standard black tea, called bo-lay.  You can ask for other teas (like chrysanthemum or green), but this is the one they serve automatically if you do not specify.

    It also can serve as a base to combine with other teas, esp. if they are sweeter (chrysanthemum usu will have sugar added to the tea prior to serving).

    Yes, there's caffeine in it.

    Many restaurants are switching over to green tea (mainly the fast food take outs), but the "hard core" chinese restaurants, esp. in a chinatown area will serve the bo-lei.
