Realistically, why would you go into an educational field if you had no concept of what jobs for which it was useful.  I'm sure there are several positions for people with degrees in anthropology.  In a major city where ethnicity has a strong bearing on many cultural factors, from education to advertising, you should be able to advise many companies on the cultural aspects of their business or decision making.

There are also probably schools and museums which might be able to use your knowledge.

Unfortunately, when you decide to major in some of the less practically driven educational fields, and instead major in one which is more esoteric; it often takes an advanced degree at the masters or doctoral level to have significant success.
