What type of make of canoe/kayak do they use at centre parks?

If you mean the type of Kayak  featured on the "Watersport Holiday"  section of the Centre Parc website then you've actually already  answered your own question! :-)  That type of Kayak is known as a "Sit on Top" Kayak.

Dont know, not sure they have a brand name on them!

But ocean kayaks are the ones (or similar), and one supplier ive linked below, hope this helps.
