What type of saw could I use to cut a 5/16 bolt?

A hack saw,reciprocating saw. angle grinder.

Just a tip, if you are going to install a nut on after the cut thread your nut above the cut line and then make the cut, back the nut off and that will straighten up the threads.

A hack saw with a 18 TPI blade should go right through it in about 3 minutes.

Use a metal cutting hack saw. It has fine teeth.

You can use a Dremel tool with a cut-off wheel.  It is really simple to use, requires no sawing, and is very quick.  Make sure you wear safety glasses to avoid getting metal in you eyes.
