  1. I like to make the plain ones!

    Unsalt butter 50g  + flour 250g + baking powder 4 tsp + 1 egg + cottage cheese 50g + milk  70 cc + sugar 1 tsp

    (makes 6 - 8)

bake in preheat oven 190 degree C for about 12 minutes

  2. I love to make the typical British sweet plain scone - the light, fluffy and exceptionally more-ish ones. Served with thick Greek yoghurt and 66% fruit preserve.

    Other variations include:

    - Devon scones with clotted cream and jam

    - cheese

    - cheese and ham

    - sundried tomato

    - raisin/sultanas

    - chocolate (with cocoa in the dough) and chocolate chunks (Valrhona) stirred through

Also American biscuits and British scones vary a little - biscuits in the US, as far as I know are eaten with some meal, they are usually savoury - although they do have a very similar texture and consistency as British scones. Examples include biscuits and gravy (probably not what you think...)

American scones are a different breed altogether - they are bigger, more substantial and rarely light and fluffy, they are dense, dryer and in a sense similar to rock cakes. I have come across numerous variations including chocolate chip, oats, hazelnut, coffee, apricot, pumpkin and lots more.

  3. Cranberry Orange Scones

    1 1/2  cups all-purpose flour

    1/4  cup sugar

    3  teaspoons baking powder

    1/4  teaspoon salt

    1/4  cup butter

    1/2  cup dried cranberries

    2  teaspoons grated orange rind

    1/2  cup buttermilk

    1  egg

    1  cup powdered sugar

    2-3  tablespoons orange juice

Preheat oven to 400 degrees F.

Mix together flour, 1/4 cup sugar, baking powder, and salt in a bowl; cut in butter with a pastry blender or fork until mixture resembles coarse crumbs.

Stir in cranberries and orange peel.

In a small bowl, mix buttermilk and egg; add to dry ingredients all at once, stirring until mixture is just moistened.

On a floured board, knead gently a few times, but not too much.

Form into a patty on an ungreased cookie sheet; cut into 8 wedges with a knife but do not move it.

    Bake at 400 degrees F.

for 15-25 minutes or until light golden.

Mix together powdered sugar and orange juice into a glaze; drizzle over scones.

    Separate scones and serve warm

  4. Personally I've made chocolate chip ones.

But I've eaten some very yummy lemon poppyseed ones.

    Basic Scone Recipe

    INGREDIENTS:

    1 3/4 cups all-purpose flour

    4 teaspoons baking powder

    1/4 cup white sugar

    1/8 teaspoon salt

    5 tablespoons unsalted butter

1/2 cup dried currants or raisins

    1/2 cup milk

    1/4 cup sour cream

    1 egg

    1 tablespoon milk

Preheat the oven to 400 degrees F (200 degrees C).

Sift flour, baking powder, sugar and salt into a large bowl.

Cut in butter using a pastry blender until it is in pea sized lumps.

    Stir in currants.

Mix together 1/2 cup milk and sour cream in a measuring cup. Pour all at once into the dry ingredients, and stir gently until well blended.

Either put scone dough in a circle and cut with pizza cutter into eight or more wedges, depending on the size you want. Or you can flatten the dough and cut out with biscuit or round cookie cutter.

Place on cookie sheet making sure they don’t touch.

Scones do grow so you will want to place them at least an inch apart.

Whisk together the egg and 1 tablespoon of milk. Brush the tops of the scones with the egg wash. Let them rest for about 10 minutes.

Bake for 10 to 15 minutes in the preheated oven, until the tops are golden brown, not deep brown. Break each scone apart, or slice in half.
