Depending on where you were at in the middle ages you might just wear a tunic, but as the middle ages progressed clothes got a lot fancier. For the 15th century the du Berry Book of Hours is a good place to start: http://www.ibiblio.org/wm/rh/ (look at some of the fieldwork pictures and you'll see quite a difference between them and the nobles in other pictures). For the 13th century the Maciejowski Bible illustrations are wonderful http://www.medievaltymes.com/courtyard/m... There are sources earlier than that but they aren't as clear as to what you are seeing as the later medieval ones.
