What types of things do employers want to see in a writing sample?

If an employer asks for a writing sample (for a research assistant job) what should you give them?

The idea sample would be a short (1-2 page) research paper.  If you don't have anything that technical, anything that shows a mastery of scientific vocabulary and phraseology would work.  Research assistants write conclusions, reports and possibly grant writing.  They want to see if you can write at a technical and professional level.
