  1. Taro and okra are fast, but nothing can grow from seed to edible in 1 or 2 weeks.  A month, yes, but not much less than that.


  2. Raddishes come on quickly.

  3. Most of the lettuces grow extremely rapidly and are ready to start harvesting young leaves in a couple of weeks
