  1. Indian cooking uses LOTS of vegetables!

    Onions, tomatoes, potatoes, spinach, green peas, eggplant varieties, leafy greens varieties, pumpkins, squashes, gourds, bell peppers, chili peppers, radishes, kohlrabi, mushrooms, sweet potatoes, yams, taro, yucca, plantains, carrots, green beans, cauliflower, okra, cabbage, beets, corn, cucumbers, mustard leaves, lotus root, purple yam, turnips, long beans, french beans, chayote, daikon, green onions, bamboo shoots

    Herbs & Spices:

    ginger, garlic, dill, mint, cilantro, curry leaves

    Indian vegetables:

    karela (bitter gourd)

    petha (ash gourd)

    padwal (snake gourd)

    thurai (ridge gourd)

    lauki (bottle gourd)

    papdi (broad beans)

    gavar (cluster beans)

    patra (colocassia leaves)

    shevgachi shenga (drumstick)

    methi (fenugreek leaves)

    raw green mango

    raw green jackfruit

    young coconut

    thondli (? in English)

    amla (gooseberry)

    khel phool & khel guda (banana flower & stem)

    New vegetables:

    broccoli, zucchini, squash varieties, celery, lettuce varieties,
