Im doing a vegeterian pasta dish.

  3. zucchini is always good. mainly you will use tomato'ss and onions and maybe some peppers. as for the sauce you will have to do your own research on that. sometimes you can go to the produce section of your grocery store and they have freerecipess for vegetarian and vegan dishes.

  4. whatever vegetables you like.  You could do a tomato sauce with onion, courgette, carrot, peppers...  or a creamy sauce with spinach, rocket, asparagus....the choice is yours

  10. If you're using a tomato-based sauce, try chopping up lots of red and green pepper, mushrooms or oyster mushrooms (or indeed both), grated carrot, and some onion and a little garlic, crushed.

    You can also add eggplant (aubergine) and/or zucchini (courgettes) but if you add them, make sure the sauce cooks thoroughly. Well-cooked eggplant adds a lot of richness to the sauce. And don't forget the basil and oregano!

    Top with grated cheese.

    For an extra tang you can add a dash of chilli sauce to the tomato sauce.

  15. It varies from time to time depending on the pasta type, if it is hot or cold, what sauce I am going to use, and my mood.

    Most of the time I like asparagus, avocado, tomato, artichokes, beets, mushrooms, squash, zucchini, bell peppers, red and white onion, garlic, spinach, cauliflower, eggplant, cucumber, olives, radish, carrots, peas, parsley, cilantro, broccoli, vegan parmesan, seaweed, sun dried tomatoes, olive oil, nuts, lettuce, and green beans.

    For sauce I like red tomato, vegan alfredo, garlic, nutrional yeast cheese sauce, Italian herb, vegan creamy cheese, avocado, vegan pesto, nut cheese sauce, peanut sauce, hummus, red pepper cream, creamy mushroom, cream spinach, black bean, creamy bean, curry, balsamic, vinaigrette, tahini, and marinara.

  18. Any non-meat sause should be fine, basically a normal tomato sause+spagetti...

    or you could fry some tomatoes, onions, mushrooms, ect in some oil and serve that with the pasta and forget the sause. Pine nuts and roasted red pepper can add an more exotic twist. Note that a vegan will also not want dairy. Good luck!

I would have buttered asparagus, baby corn with flat leaf parsley for one dish OR fry courgettes, red pepper, mushrooms and cherry tomato in olive oil then mix with the cooked pasta, chuck a good handful of grated cheddar on top and bung it in the oven till it melts for another option.....neither I feel needs sauce, maybe just some homemade garlic bread=]

  25. My mam makes a lovely sauce with tomato puree, red and orange peppers and mushrooms. Its blended and tastes really nice.

  27. I will honestly put just about any vegetables in pasta... with or without a sauce. To keep it simple and economical, I usually use frozen vegetables.

    My personal favorites are mixed veggies with buttered noodles. Just toss in some garlic, salt, pepper and other spices that interest you with your favorite butter or margarine in a pan and saute. Then add the cooked pasta and veggies. This can be done in numerous combinations and is quick. (Also works with rice.)

    With red sauces, I tend to go the direction of spinach, squash, and sun-dried tomato. I usually bake these kind of dishes and top with cheese in the last few minutes. If I'm cooking for a meat-eater, I will also occasionally toss in a burger-crumble-style meat substitute.
