What vegetarian foods will keep you full overnight?

I eat a lot of spinach salads with brocolli and tofu (and some other veggies mixed in) for dinner. I feel perfectly full after a meal, without feeling overstuffed.

The problem is that it doesn't last. I have to eat it right before I go to bed, and still five hours later I feel famished. The tofu just isn't cutting it.

I've tried adding rice, but that seems to be "puffed up" with water, and then "deflate" overnight, leaving me even hungrier in the morning.

I also try to avoid pastas and tomatoes, as they tend to result in acid laryngitis (acid reflux/heartburn) in my throat. And the pastas suffer the same problem as rice: puffed up by water, deflates at night.

  1. You sound like me, always hungry. The magical answer is actually something really boring - fiber. You need to eat something full of fiber that'll stick to your ribs - try oatmeal. I always eat a bowl of oatmeal at night with a teaspoon of brown sugar, raisins, and some cold soy milk. Totally delicious and keeps me (a constant snacker with a high metabolism) full all night.

    If the pasta and rice you're eating is bleached (not whole wheat) then it's likely lost all the fiber that keeps you full, and is simply a simple carb that burns up as sugar quickly in your system and leaves you famished. Try buying brown rice and whole what pasta.

    Other high fiber foods that'll keep you full:

    a bowl of bran flakes or Rasin Bran

    hummus (TONS of fiber here, have it with whole-wheat pita!)

    peas

    artichokes

    apples

    pears

    beans

    whole-wheat and rye breads and pastas


  2. baked potato. try squash spaghetti with marinara sace. it tastes just like real spaghetti!  you can find the recipie online.
