  1. various sizes of fields, from huge latifundia (plantations) to individual fields

the importance of agriculture was not only in food production but also in military organisation- the "Tem" (agricultural administration) was the basis for the recruitment of infantry and light horse. many settlers received land in exchange for the promise of military service

This system worked well until it was broken by the systematic de-population of Byzantine lands by muslim invaders

as to agricultural production- wheat, vegetables, fruit. Also silk production. fertilisation with processed manure.

labour- mostly free men, some landed, most without land, serving for food and some money. slaves too, though they were not considered as cost effective economically and the keeping of slaves was frowned upon by the church

  2.   They grew various forms of wheat, almonds, peaches, apples, cherries, figs, coffee, and many vegatables.
