I would say, since they are in south america, it would most likely be capoeria, but it could just be something made up for the movie.

Hard to say.  Ernie Reyes Jr., and every other great actor/stuntman, cross trains like crazy.  If you're asking because you want to do it to, I'd say go capoeira or find a kung fu studio that focuses on acrobatics.  If you're asking because someone asked you, smile and respond with the question, "what style wasn't it?"

that sounds like an accurate assesment to me, i dont think that movie gets enough credit, there was some great fight scenes and even greater christopher walken speeches...definitely the rocks best movie...

It is an ancient martial art from the jungles of Holly wood called , blue screen bullshido. Very effective if you aren't fighting anyone and just acting like an idiot.
