To do a roast for 2 adults and a little one on Sunday? I'm looking at either shoulder or leg - boneless. Which is best? And what is the best way to cook it?

  1. Hey there aim for about 180 grams per portion for an adult! If you have a good butcher ask him to whip the leg bone out if you require ease. If time is not an issue leave the bone in and cook the meat at a very low temperature. I have cooked roasts at 80 degrees celsius before, it took apprx 7 hours but the results were phenomanal meltingly tender, and you don't get that whole shrinkage going on with the meat.

To cook season the outside with salt and pepper and you can seal it first in a pan to put a little colour on it.

Put it on a lightly greased tray. (can also put a little rosemary onto it if you like)

While slow roasting it is good to have a little meat probe to insert into the meat close to the bone (as this takes longest to cook) you want a temperature of about 75- 80 degrees depending on how well done you like your meat.

  2. One or two slices of lamb roast will weigh about 180 grams.

I would budget on about 230 grm to 300 grm of lamb meat per person if I were you.

Now either do it in a slow cooker and roast or pan seer it afterward to get a crisp outer on it, or roast it from the start in the oven with baby potatoes.
