Generally the meat was spoiled, and heavily seasoned to cover any objectionable odor or flavor. unfortunatly spices where expensive and hard to obtain, so people got creative. Also Hunting was generally controlled by the ruling classes. so the peasants generally lived on Bread,cheese and wine. Cheers
