  1. The reasons that I could figure out is:

.Money. Singapore has a strong currency (1 Singapore dollar = 4.86517817 Chinese yuan). Though the living expenses is also higher, they end up having stronger purchasing power. Not to forget that part of their savings send back to their home country means a lot to their families back there.

.Language. Chinese (Mandarin) is widely spoken in Singapore. They will have little language barrier here in communicating with the locals. Thus, they are most welcome to work in the service language since they have little or no problem dealing with their customer as compare to people from other countries(who is not language-efficient in Chinese or English).

.Government policy. The Singapore government adopt an open policy to welcome foreign workers. The number of Singaporean is not growing in a pace as fast as their economy and work force need. With the fertility rate of 1.29(2007), it does not do any good to increase the local population. Further more, most Singaporean (especially people below the age of 40) shun to work in the service industries (such as waiters in restaurants) as most of them are highly educated and prefer to work as a professionals or skilled workers.

.Culture. Although Singapore is a multi-racial country, a large majority of them are of Chinese ethnic. Besides the aforementioned language similarity, the Chinese people from China are also quick to adapt to local foods.
