What wii game best utilizes the wiimote and nunchuck?

I'd say Super Mario Galaxy. The controls work well, with some motion controls, but not too much and well implemented as to not make it gimmicky.

The best games for wii are going to come this spring when the Wii Motion Plus attachment is released.

Wii Play is basically an improved Wii Sports you barely use buttons. Galaxy and Twilight barely use it else than shaking (for Galaxy this causes you to spin, Twilight slice) and aiming. Wii Play took it further.

well i have to say wii play is best for wii mote. legend of zelda twilight prnicess is good for both. and harry potter order of the phonix, but the best wii mote and nunchuk game is super mario galaxy.

My personal favorite for lots of Wiimote+Nunchuck action is Trauma Center. Okay, so all of the actions are utilized with the Wiimote, but you couldn't switch between surgical instruments so quickly without the Nunchuck.

Super Mario Galaxy and Twilight Princess do a great job of using both.

Trauma Centre uses them well, but the nunchuck is only used to select tools

This is not well known, but Super Paper Mario, I think, is the best with the WiiMote. You don't even need the Nunchuck because there's so much to do with the WiiMote! Seriously! Look it up, it's got awesome gameplay and a plot that's longer and more interesting than Super Mario Galaxy! Few people have said this because it's not as showy-showy as the other two games mentioned, and Wii Play is only 9 mini-games that get old fast, and it's made as a training game for the WiiMote. Seriously, Super Paper Mario is the best!
