If all the water would dry up, all life would cease to be. All plants, animals, humans, bacteria, viruses, everything would cease to be and the earth would become a barren rock like mars.

First of all, how would all the water disappear from the earth?  Very improbable given today's set of circumstances.

Besides the obvious, life as we know it would cease to exist, at least all the species we care about, plants, animals, etc.  Bacteria might be able to survive if there was an alternative substance such as liquid methane.  

Non-living changes would be seen in items not rusting, oxidation of metals/rocks would be reduced, meaning things will generally last longer.  The earth would face larger temperature extremes (day/night) since water is a greenhouse gas that traps heat in addition to reflecting light entering the atmosphere.
