What world cuisines have interesting dishes for vegetarians?

I like flavorful stuff like kimchi, and tofu pad thai.

I don't want to just eat plain steamed veggies but I'm trying to eat less meat.

  1. Indian, almost all Asian and Middle Eastern all have wonderful non-meat dishes.


  2. Chinese - veggie stir-fry, garlic eggplant, fried tofu

    Thai - veggie pad thai, tofu coconut curry, summer rolls

    Japanese – veggie sushi (avocado, carrot, cucumber,

    mushroom, tofu, inari), edamame, miso soup, tempura

    Ethiopian - lentils, collard greens, yellow split peas, injera

    Indian - chana masala, aloo gobi, dal, veggie samosas

    Mediterranean – hummus, falaffel, baba ganoush, mujadara, stuffed grape leaves, jasmine rice

    Mexican – bean burritos, tacos, enchiladas

    Italian – Fettucine Alfonso (vegetarian version of Fettucine Alfredo), Fried Spaghetti and Spinach Lasagna

  3. Asian dishes seem to be the easiest to leave meat out of or substitute tofu with.  I love Thai veggie and tofu coconut curry.

  4. Indian dishes offer amazing options for vegetarians and so do many Asian dishes. Spinach Paneer is off the hook!

  5. kimchi is awesome. i dont know if your just eating the cabbage kimchi but i loooove cucumber kimchi. its also easy to make.

    2 large cucumbers cut into rounds

    soak in salt water. enough to cover all the cumcumber  

    drain after three hours leaving just a little salt water and dried crushed red pepper flakes and vinigar along with chopped scallions and onion if youd like soo good.

    what my mom will actually do with cabbage kimchi is add water and boil it and add sliced tofu to make kimchi soup and she will eat it over rice.



    as for other "world cuisines" try indian or mexican foods.

    hummus - store bought or home made

    home made

    chic peas cooked then smashed into a paste add olive oil , garlic ,salt, pepper,

    from there you can add anything veggie wise really just make it into a paste and add into it .

    really good with spinach and artichokes
