A cooking lesson would be a great activity to include all the components mentioned.  Food topics are included in social studies, science, health.  Reading is essential for the activity and math skills are needed in measurements and counting items.  The child could choose their own recipes based upon their interest and needs.  Food projects are easily related to cultural and home experiences.
