What would be a good anniversary dinner to make for my husband?

He likes pretty much anything except seafood. Any great ideas out there??

  1. Rack of Lamb with Caramelized Shallots and Thyme Crust

    1 1/2 tablespoons olive oil

    3 large shallots, chopped (about 1/2 cup)

    Salt and freshly ground black pepper

    3 tablespoons balsamic vinegar

    1/2 cup pulverized fresh bread crumbs

    1 1/2 tablespoons chopped fresh thyme leaves or 2 teaspoons dried thyme, crumbled

    1 rack of lamb (7 or 8 ribs), frenched, at room temperature, trimmed of as much fat as possible

    1 tablespoon vegetable oil

    1 teaspoon Dijon mustard

    Preheat oven to 400 degrees F.

    In a small skillet, heat oil over moderate heat until hot but not smoking and cook shallots with salt and pepper, stirring, until golden, about 5 minutes. Add vinegar and boil until liquid is evaporated. Remove skillet from heat and stir in bread crumbs and thyme. Season with salt and pepper, to taste.

    Season lamb with salt and pepper. Heat vegetable oil in a saute pan and sear the lamb on all sides. Transfer, rib side down, to a small roasting pan. Spread the meat side with mustard and pat on crumb mixture, making an even coating. Roast lamb in middle of oven until a meat thermometer registers 120 degrees F for medium-rare, about 25 to 30 minutes.

    Carefully transfer lamb to a cutting board and let stand 5 to 10 minutes. Slice lamb into chops.

    White Chocolate Fig Kisses

    Ingredients:

    4 oz. white chocolate, chopped

    24 dried whole figs

    1/2 cup finely chopped pistachio or macadamia nuts

    Preparations:

    Melt chocolate in a double boiler, stirring chocolate often. While chocolate is melting, line a tray with wax paper. Dip fig in chocolate, then into the chopped nuts. Refrigerate briefly until chocolate has hardened. Store figs in refrigerator inside an airtight container with waxed paper between layers for up to one week.

    Makes 24 Servings.

    - ground beef, sausage, 1 onion, garlic, pepper, portabello mushrooms, ricotta cheese, 1 egg, mozerella cheese, spaghetti sauce, and of course the pasta.

    and for desert: greek chocolate balls.

    - walnut meats, sweet cooking chocolate, zwieback, granulated sugar, cinnamon, rose water, and confectioners sugar.

    put first three ingredients through the fine blade of a food chopper. add sugar, cinnamon and rosewater. form into small balls. roll in confectioners' sugar.

    this is for eight people.  You can cut the amount down for just you and him.  You could make him a chocolate cake for desert  All men like chocolate cake.  Then I would get him a gift.  I would buy a Red Hot & s**y Lingerie.  Wrap it up in a box.  Put a card in it.  On the card tell him how much you love him.   And say I will wear your present tonight if you treat me good today.

    course 1: salad

    mix spinach, tomatoes, cucumbers, and chick peas together with your fav dressing for a light salad.

    course 2: soup

    buy a box soup not canned and add your own fresh seasonings

    thyme and rosemary will go with whatever you choose.

    bake some bread sticks to go with the soup

    course 3: grilled steak topped with blue cheese crumbles.

    mashed potatoes and a veggie melody on the side.

    course 4: make him his fav dessert. you know what he loves.


  6. Make him something that he really likes from scratch or make something you have never made before. My boyfriend is dying to have me make him lasagna from scratch... lol. But try that or make a yummy steak and a very special dessert that you can feed to eachother :-)

  7. Take him to a good stake joint.  I if you go with a big chain I would recommend salt grass but a small family owned place would be good too.  You cant go wrong with stake....and dont mess up a good stake with blue cheese crumbles.
