Question:

What would be a good dessert to take down to our friends' lake house this weekend??

I dont think I want pies or cakes we'd have to cut... I'd like either a cookie.. or some kind of brownie or bar that i can have already cut into squares and put in a container...Chocolate, cheesecake, fruity, marshmallow, any flavor I would do!

Any yummy ideas???

Please only suggest things you have made and actually tried.

  1. these coconut macaroon are always a big hit when i make them

    i melt 1 bag of semi sweet chips then when cookies cool down i dip the bottom in chocolate and drizzle more on top then allow them to set on wax paper.

    i NEVER have 1 left over

    Coconut Macaroons

    14 ounces sweetened shredded coconut

    14 ounces sweetened condensed milk

    1 teaspoon pure vanilla extract

    2 extra-large egg whites, at room temperature

    1/4 teaspoon kosher salt

    Preheat the oven to 325 degrees F.

    Combine the coconut, condensed milk, and vanilla in a large bowl. Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks. Carefully fold the egg whites into the coconut mixture.

    Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons. Bake for 25 to 30 minutes, until golden brown. Cool and dip into chocolate

Get a great chocolate brownie mix (just a regular one, not with all sorts of stuff or flavors in it) Make it according to directions: Add 1 cup of slivered almonds (the real thin ones) and 1 cup of flaked coconut....bake according to directions on the mix and you have delicious Almond Joy Brownies....they are really tasty....and simple to make and easy to transport...and eat!!!

  5. These are so easy and absolutely decadent!

    HELLO DOLLY

    1/2 c. butter

    1-1/2 c. graham cracker crumbs

    1 can Eagle Brand sweetened, condensed milk

    1 6-oz. package chocolate chips

    1/2 c. (or 3-1/2 oz. can) flaked coconut (optional)

    1 c. chopped nuts

    Melt butter in bottom of 9x13" pan.  Remove pan from heat and spread crumbs evenly over butter;  pour milk evenly over crumbs.  Sprinkle chips, coconut & nuts on top and press down gently.  Bake at 350 for 25 min, or until golden brown.  Cool and cut into bars

  6. This is my grandmothers recipe and they are my favorite. I took them to work and everyone loved them, enjoy!

    Miniature Cheesecakes

    1 1/2 packages (8 oz size) cream cheese

    1/2 cup sugar

    2 eggs

    3/4 tsp vanilla

    Topping:

    1 cup sour cream

    1/4 cup sugar

    1/2 tsp vanilla

    strawberry or pineapple preserves

    Let cream cheese soften in a medium size bowl; add 1/2 cup sugar, and cream together thoroughly.

    Add eggs, on at a time, beating well after each addition.

    Add 3/4 tsp vanilla and beat until smooth and creamy.

    Place paper cupcake (foil if you have them) in a muffin tin and using a teaspoon, fill each one 2/3 full. Bake in a preheated 300 F oven 20 to 25 minutes. Cool 10 minutes (cakes will cave in slightly in center).

    Make topping: In a small bowl, thoroughly mix sour cream, sugar and vanilla. Using a teaspoon top each with a small amount, enough to cover the top. Top with small amount of preserves in center of each cake. Return pan to oven and bake an additional 10 minutes. Makes about 2-3 dozen.


  7. Chex® Muddy Buddies®

    Another popular name for this favorite mix is "puppy food". Chow down; it's doggone good!

    Prep Time:15 min

    Start to Finish:15 min

    Makes:18 servings (1/2 cup each)

    Ingredients:

    9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)

    1 cup semisweet chocolate chips

    1/2 cup peanut butter

    1/4 cup butter or margarine

    1 teaspoon vanilla

    1 1/2 cups powdered sugar

    Preparation Directions:

    1. Into large bowl, measure cereal; set aside.

    2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.

    3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

  8. Okay this isn't something that you can take along like a bar dessert but its is way worth it!! Even if you don't use it for your visit still try it out sometime.

    Blueberry Dessert:

    2 packages Cherry Jello (large)

    1 can Blueberries in juice

    1 can (15 oz.) Crushed pineapple in heavy syrup

    1 package Philadelphia Cream Cheese

    1 Tsp. Vanilla Extract

    ½ cup sugar

    ½ cup chopped pecans

    Dissolve Jello in 2 cups boiling water.  Add blueberries and pineapple with juices.  Let set till firm in refrigerator.

    Topping:

    Mix sour cream, cream cheese, vanilla, sugar and nuts.  Blend.  Cover Jello  with topping when firm and refrigerate until ready to serve.

  9. THREE INGREDIENT BROWNIES

    1-1/2 c. graham cracker crumbs

    14-oz. can sweetened condensed milk

    12-oz. pkg. semi-sweet chocolate chips

    In a large mixing bowl. Combine all ingredients

    together and pour into a greased 9" x 9" baking dish.

    Bake, uncovered, at 350 degrees for 30? 40 minutes.

    Let cool before cutting. Makes 12 servings.


  10. I think a lemon bar would be refreshing for a lake environment.  Light and airy!  As for chocolate, it becomes too gooey in the warm weather.
