I agree with the guy that said Raise the Steaks, or anything similar to that.  It might not necessarily work with a fine dining place like that though.  Even though it's 'cute' it might not sound totally professional.

What do you think about Chop Monster?  The frame of reference for the name originates in Jazz music.  This also opens the opportunity of integrating Jazz into your fine dining experience while capitalizing on “Chop” in the name which is a traditional culinary name for a steak.  If you like it, I own ChopMonster.com so perhaps we can work something out.

I don't know something catchy for vegas but something that will want to make me to come to Binions because I come to Vegas 8 times a year and never had the desire to come there.  And I don't say that to be rude either.  You need something that will draw people there.  I don't know if you taking a fine dining or just a $10 a meal place.

But I would bank on the view verus the venue.
