Question:

What would be a good substitute for red peppers in this recipe?

I'm making Panini with mozzarella and what would be red peppers. However, two of the people in my family hate red peppers. So, what would be a good, healthy substitute?

Here's the exact recipe:

* 2 tablespoons butter

* 8 slices white bread

* 1 cup shredded mozzarella cheese

* 4 whole jarred roasted red peppers, patted dry and cut into strips

* 1/4 cup grated parmigiano-reggiano cheese

* 12-15 basil leaves, roughly chopped

  1. black olives or mushrooms---or if you could use pepperoni


  2. Instead of the red peppers I would use sundried tomatoes. The reason I suggest tomatoes is that they are sweet with a little bit of acid. It is just enough for the basil to complement it. This resipe is a trick for the substitution because basil, especially fresh leaves of basil are bold in flavors. If you don't like the tomatoes I would suggest some fine chopped mediterranean olives or mushrooms. Hope this helps and enjoy!

  4. i would chop tomatoes and use them instead of roasted peppers.... alot of restaurants substitute tomatoes due to the high cost of red peppers....and call it bruchetta

  5. hmmmmm....several options come to mind:

    1.  Sundried tomatos

    2.  Green chilis (mild)

    3.  Artichoke hearts (marinated and chopped or artichoke tapanade)

    4.  Yellow peppers, seeded and blanched.

  6. I would just skip them unless they are "hot" peppers, and not "bell peppers".

    For adding some heat, you could use some Cayenne powder.

  7. How about some fresh tomatoes.  I would squeeze some of the juice out of them before I put them in the sandwich to avoid sogginess.  Probably should salt and pepper them too.  Sounds good and it's the tomato season.

  13. You can leave the red peppers out. Try some grilled mushrooms, they won't have the pop of flavor that the red peppers have though, but they should be quite tasty.
