For the seventh anniversary, traditional materials are copper and wool. These also apply to the modern materials along with brass.

You could find a nice piece of copper or brass sculpture or figurine that could be displayed.  (man and woman embracing)   or give her a beautiful wool blanket to snuggle under together (but have it embroidered with your initials, names and/or your wedding date).
