Question:

What would/do different cultures do with shiitake mushrooms?

I've only ever had shiitake mushrooms in Asian cuisines. I got wondering if Italians or middle eastern or whatever cuisines used them and if so, how?? And if not, would they? and How would they?

  1. I am a former chef and never used them outside of Asian cuisines like Japanese, Chinese, Vietnamese, Thai and Indonesian, they are not strong flavours and one hotel I worked at we had a breast of chix with a reisling,cream sauce with shiitake mushrooms in the sauce, as said soups are nice, even mixed with white, portabellos and cremini to make a mushroom stuffing known as "duxelle" is a nice touch, even mixed with white mushrooms fried with onions or on there own with a steak is a nice bit of contrast.

    Here's a family favorite recipe:

    SHIITAKE MUSHROOM CURRY

    Serves 4

    2 tbsp oil

    1/2 tsp cumin seed

    3 cloves garlic, minced

    2 tsp fresh ginger, minced

    4 c shiitake mushrooms, cleaned and halved

    1 large tomato, chopped

    2 green chilies, sliced

    1 c onion, chopped

    1 tsp ground coriander

    1 tsp garam masala

    1 c water or vegetable stock

    1/2 cup cream

    1/4 c fresh cilantro, chopped

    2 tbsp creme fraiche or sour cream

    Heat oil over high heat. Add cumin seed and stir for 10 seconds. Add garlic, ginger, mushrooms, jalapenos, and onion. Cook for 5 minutes or until mushrooms are soft. Add coriander and garam masala and stir for another 30 seconds. Add the tomato and water or stock, bring to a boil, lower heat and simmer for 5 minutes. Stir in cilantro, cream and creme fraiche and cook for 1 more minute. Serve over rice or with rotis.

  4. I've seen Shiitake mushrooms used in Cream of Mushroom soups or in fancy restaurants they call it Mushroom Bisque.

    Mushrooms used in stuffings and sautees.
