  1. Lemon Butter Broccoli:

    1/4 cup butter or margarine

    1/4 cup water

    1 lemon, juiced

    1/4 teaspoon cayenne pepper

    salt and pepper to taste

    1 (16 ounce) package frozen broccoli florets

    In a large skillet, combine the butter, water, lemon juice, cayenne pepper, salt and pepper. Bring to a simmer over medium heat. Add the broccoli to the pan, stir to coat, and cover with a lid. Cook for 10 to 15 minutes over medium-low heat, stirring once, until broccoli is tender but still bright green. Serve warm, or refrigerate and serve cold.

    Asparagus Parmesean;

    1 tablespoon butter

    1/4 cup olive oil

    1 pound fresh asparagus spears, trimmed

    3/4 cup grated Parmesan cheese

    salt and pepper to taste

    Melt butter with olive oil in a large skillet over medium heat. Add asparagus spears, and cook, stirring occasionally for about 10 minutes, or to desired firmness. Drain off excess oil, and sprinkle with Parmesan cheese, salt and pepper.

  2. White rice with butter, salt and pepper, steamed squash with sliced onions, and frozen green beans cooked in microwave or on stove. Just butter and salt everything.

  3. rice and broccoli go great with lemon chicken. I would also consider some steamed carrots.  A yogurt based dill sauce is great for fish and for chicken I like making a dijon mustard and honey glaze.

    I usually serve asparagus and rice with fish, mashed potatoes and corn or green beans with chicken. for a special treat make green bean casserole. its yummy anytime of the year

    Nice compliment to the peas would be baby carrots and brown sugar

    I love to oven roast sliced redskin potatoes with olive oil and rosemary

    If you want an incredible light fish dish, you cannot beat "pecan encrusted tilapia" so light and easy to prepare.

  5. well, i love lemon chicken, but here's something that will knock his socks off!  IF you like pesto and mushrooms and Parmesan cheese, that is!

    first of all, if you really want to make lemon chicken, you could serve it with steamed broccoli and a mixture of wild and white rice.  Have a nice fresh salad topped with feta cheese and kalamata olives. dress it with good virgin olive oil and vinegar and sprinkle it with some dried oregano.

    now for the other chicken idea...

    Chicken b*****s with pesto and mushrooms

    preheat oven to 350

    1 boneless, skinless chicken breast per person, washed and patted dry

    1 tablespoon ready made pesto per chicken breast

    sliced mushrooms-they should be fresh, but canned would do

    1 tablespoon grated parmesean cheese per chicken breast

    garlic powder, salt and pepper

    place the chicken in a baking dish and sprinkle both sides with the garlic powder, salt and pepper.  Slather 1 tablespoon pesto onto each breast and layer on the mushrooms- enough to cover the surface.  cover the dish with foil and bake in the 350 degree oven for 20 minutes.  remove the pan from the oven and throw away the foil.  sprinkle the parmesan cheese over each breast.  i'm usually pretty generous with the cheese.  place the dish back in the oven and back 10 minutes more.  

    this is an elegant recipe and requires very little work. it makes a bit of a sauce during the cooking which you could drizzle over the rice.  I serve this chicken with a combination of steamed white rice and wild rice and as a cooked vegetable, try a medly of broccoli, carrots, and cauliflower-something to add color to the plate.  serve a fresh lettuce salad. you could even buy one in a bag and top it with a good seasons italian dressing mix.  Throw in a few olives and pepperoncini for extra color and flavour!

  6. When I make my lemon chicken, I always have buttered white rice, sauteed broccoli with garlic butter, and a salad.

  7. You could do a chicken stock white rice

    I would also recommend some roasted vegetable - this time of year I find some chopped onion (cut into bite sizes), cherry or grape tomatoes, zucchini, grated garlic and olive oil is delicious.  I spray a sheet pan with pam, put all vegetables on pan, grate a clove of garlic, add some EVOO (extra virgin olive oil), salt and pepper all the veggies and toss with your hands.   Roast for about 20 minutes or until tender (I usually do about 375 or so in the oven)  

    Also, you could use any vegetables you want to.  The cherry tomatoes get a great flavor from roasting them.

  8. Baked Sweet Potato French Fries (slice up potatoes, shake in bag with a little bit of olive oil lay out on foil lined baking sheet, salt & bake at 425 for 20 minutes)

    Steamed Broccoli - use chicken broth to steam with for a little more flavor

    Super tasty & healthy!
