What would happen if all the black athletes played for African teams in the olympics?

Why would they do that if they aren't African? Hard to say what would happen as it won't happen.

Then we'd all fall into a stereotype and based on that alone we'd stereotype that the whole continent of Africa would win all the track games, "Europeans" would take the swimming, wrestling, etc events, Asians would take over badminton and table tennis, Latin Americans would take soccer and Native Americans would be underrepresented if they were even there.

It'd be like regressing back to a time when everything was segregated. Olympics would suck because we'd all know who would win what. The games would lose its funding, less people would be interested esp knowing that they're stuck to play the sports that their "race" was known to be good at.

Oh and if that was the case, Cullen Jones (one of two African Americans to compete in swimming) would probably not have the funding to be swimming for an African nation because the focus would be on its track stars.
