The one from the carabao is more favored by many.

Between carabao & cow, it's cow's milk.  However, white cheese is really best with goat's milk.  That's the real deal.  Sheep's milk could be added too.

i think the taste of the cheese from carabao's milk would be more interesting, it would be more pungent ang tangy as compared to the one produced from cow's milk..uh, that's of course if you could withstand the 'anggo' of carabao's milk :p

Between the two, I'd say carabao.  But have you tasted "kesong puti" made from goat's milk?  Tastes much nicer.
