  1. Check out Kitchen Nightmares on TV. The size of a restaurant does not seem to be any indication as to the quality of food or service. I've dined at a  small cafe/bar that had the best fillet Mignon anywhere to be found. It went under, mostly because it had too small a menu. It is unfortunate, that restaurants must cater to the clientele's taste, and the public on average, has poor taste. Just look at the chain restaurants;  pre-packaged, heavily salted & peppered high fat/sugar food. And people flock to them.

If your restaurant is a chain, this is what you can expect. If it is family owned and operated, it will have a menu of foods the family has traditionally enjoyed. This can be good, or bad. No telling until you get there and sample it.

  2. depend son the type of restaurant, if it's  a fast food joint, to order, if it's a sit-down place, then wait to be seated.

  3. When visiting any restaurant 1. that it is clean 2. good service 3. good food.

  4. Small sized restaurants often have the ability to concentrate on what's most important - the food. Some people get turned off by a small menu. All this means is that the chef has perfected these items (as opposed to the mess that is the Cheesecake Factory). Small restaurants often offer great service and authentic cuisine, where the experience is as important as the food itself. I love intimate restaurants with good food and little pretention!!

  5. Quick service and fresh food.

  6. I would expect a lot of daily specials (since they do not buy in bulk and must only be serving what was available fresh) - I would expect top level service and individual attention.  I would expect most everything to be made on premises with the possible exception of desserts and breads.

  7. good food, friendly staff.
