What would you if the store was sold out of celery seed and you had to can banana peppers?

Is there a substitute or do you have a suggestion?

I ONLY USE VINEGAR AND WATER TO CAN PEPPERS,

I LOVE TO CAN GREEN TOMATOES QUARTER THEM WITH A FEW ONION SLICES AND A JALAPENO OR 2 AND A COUPLE BANNA PEPPERS.

HALF THE JAR VINEGAR HALF WATER AND THEN HEAT TO SEAL GOOD -- LET SIT A FEW DAYS

NOTHING IS AS GOOD AS A POT OF PINTO BEANS AND SOME OF THOSE GREEN TOMATOES

This isn't exactly a substitute, but it's another flavor idea that my grandmother would sometimes use when pickling cucumbers, peppers, or other vegetables.  Try using fennel seed, or perhaps adding a few celery leaves in with the pickled vegetables.  And the onions you mention would be an excellent touch.  (Just make sure you have enough acid before you can your veggies, so to minimize the risk of botulism.)
