how about stride gum? you can eat the wrappers, so there'd be no littering...

i'd also say sandwiches and things that don't leave trash. also stuff labeled 'eco-friendly' - some brands of soybeans, soy sauce, ramen, etc are eco-friendly. oh, and lotsa fruits an veggies! they decompose, so you'd be in the clear if you left some behind by accident...
