Whats The Difference Between All purpose flour and cake flour???

  1. Cake flour has Baking powder and Baking Soda mix in and the flour it self in grinned finner


  2. All purpose flour has added ingredients but is not as finely ground as cake flour.

  3. Cake flour is made from low protein fine textured soft wheat flour w/ cornstarch added.  It has been sifted many times, and it it is excellent for all cakes and pastries. It also has several vitamins added.  All purpose flour has more gluten therefore it is a heavier  flour.

    All purpose flour less fine, so you can use it in cookies and things too that don't need to rise as high.

  5. Cake flour is milled finer than AP flour. The finer texture allows for a more even distribution of air when the cake is rising, resulting in a finer, smoother texture for the cake - that means no large holes like bread has.

    Think of it like sandpaper. The fine grit stuff has a smoother texture than the larger stuff.
