these are SO EASY & delicious: no-bake mini cheesecakes! mix together 2 8-oz packages cream cheese, 1 14-oz can sweetened condensed milk, 1/4 cup lemon juice, and 1 tsp vanilla. line a few muffin tins with paper cupcake liners, drop an oreo into the bottom of each (this will be the "crust"), and fill each cup with the cream cheese mixture. let set in fridge or freezer for at least an hour, and voila! i get raves whenever i make these! :-)

this is a bit of a secret of mine but i  guess i can share....... get a packet of biscuits (oreos, ginger nut or whatever) crush them up in a motar and pestle and put it into some bowls with a few big scoops of icecream. you can be fancy and add strawberries if u want. its pretty good and no cooking involved. its mega fast too! haha enjoy! =)

pink lemonade pie

Graham Cracker Crust

1 1/2 cups finely crushed graham crackers (20 squares)

1/3 cup butter or margarine, melted

3 tablespoons sugar

Filling

1 quart (4 cups) vanilla ice cream, softened

1/2 can (12-oz size) frozen pink lemonade concentrate, thawed

1 container (4 oz) frozen whipped topping, thawed

Red food color, if desired

Lemon or lime peel, if desired

1. Heat oven to 350°F. In medium bowl, mix all crust ingredients until well blended. Press in bottom and up side of 9-inch glass pie plate. Bake 8 to 10 minutes or until golden brown; cool.

2. In large bowl, mix ice cream, lemonade concentrate, whipped topping and a few drops food color. Spoon and spread ice-cream mixture into cooled crust.  

3. Freeze until firm, about 4 hours. Let stand at room temperature a few minutes before cutting. Garnish with lemon peel.

Chop marshmallows

1 medium tub sour cream

1 can mandarin segments (drained)

Any other canned fruit (drained)

Mix together

Decorate with shaved chocolate or coconut

Chill.
